Corona Virus: Day 10 – cup of tea and a biscuit

Low supplies drive you to some interesting choices. With limited supplies of flour, eggs and butter, I’m trying out some novel recipes for cakes and biscuits. This evening, I decided to try corn meal cookies. Substituting sunflower oil and milk for butter, and corn meal for flour, I was able to make some tasty if odd treats. I’ll admit that the corn meal gives them a somewhat gritty texture. And that beautiful, buttery taste isn’t perfectly replicated by the taste of swigging vegetable oil direct from the bottle. They look like very much like biscuits though and, with a little bit of squinting of the taste buds, I can just pretend I’m eating at the beach.
